Old Bay Roasted Cauliflower is one of my absolute favorite things to eat! It’s my go to side dish whenever we have seafood, and it also makes the perfect snack for watching the game. But let me back up a minute. This Kentucky girl used to have no idea what I was missing. When I first met my husband, who is a good old Maryland boy I might add, I can remember one of the first things he asked me was if I liked seafood. At that time, popcorn shrimp and fish frys were the extent of my seafood history and knowledge. He quickly introduced me to “real” seafood when he took me back to the Chesapeake Bay and let me try all kinds of fresh new things. I swear you haven’t had a crab cake unless you’ve had one from Maryland. Okay, back to the Old Bay Roasted Cauliflower….

So my husband puts Old Bay on everything, and I mean everything. This recipe was actually his idea and typically I’m not as much of an Old Bay freak as he is, but this recipe is a keeper! Cauliflower is a great source of Vitamin K and Vitamin C and is packed with antioxidants and has some amazing anti-inflammatory benefits too. The added benefit of Old Bay, is that is makes my hubby happy! 🙂

Chop a small head of cauliflower and put into a bowl.

Drizzle about 2 Tbsp of olive oil over the cauliflower and mix until well coated.

Add a Tbsp of Old Bay and mix until coated evenly.

Spread onto a baking sheet and bake at 400° for 20 minutes or until golden brown.

Old Bay Roasted Cauliflower

Ingredients:

Head of Cauliflower

2 Tbsp of Olive Oil

1 Tbsp of Old Bay

Directions:

  1. Pre-heat oven to 400°.
  2. Wash and chop cauliflower.
  3. Put in bowl and add olive oil, coat thoroughly.
  4. Add Old Bay, coat thoroughly.
  5. Arrange on baking sheet and bake for about 20 minutes or until golden brown. (I usually remove at 10 minutes, flip them and bake for another 10 minutes).

After an afternoon of tasting, trying and drooling over some delicious food, I can tell you it is not only good for you, but absolutely delicious as well. So now to the fun part, the food. First up, The Hans, which is part of their all-day breakfast menu. This sandwich, served on a sprouted English muffin or gluten-free bread, is a free-range egg with spinach, turkey bacon, avocado, tomato, and Amish cheese. The flavors just melted together in my mouth and with just one bite of this and you’ll never say the words Egg McMuffin again!

The barre3 Experience

Let’s go to the bar(re)! No not that bar. I’m talking about the one the gives you a flat belly, not a beer belly. Don’t get me wrong, I love a good night out, but this barre is way better. I have finally found my exercise “thing” and I am hooked.

I was first introduced to barre3 back in July when my mom invited me to a free class at the Ft. Thomas Antique and Design Center. I had absolutely no idea what I was getting myself into, but I thought I would check it out. Turns out, class was awesome. I was pushed, motivated and inspired, sweat like a pig, but even more importantly, I had the confidence I could actually do this. And it was FUN! Did I just say that, working out was fun? I admire those people who loooove to work out, they make it look so easy. But to be honest I am not one of those people. I am not one that can tackle exercise alone, I do a few stretches then say “oh look…wine.”  Or I tell myself to do an ab workout during the commercial breaks and then before I know it it’s “Ahhh this carpet is so comfortable….ZZZZ.” I need a pack, you know, friends that suffer along side of me as we push through it together. I need to know I am not alone, that I am part of something bigger, that I can do this by connecting with my own body. I think I’ve found my pack with barre3.

You all know I eat really healthy. I eat clean, real whole foods that come right from this earth. But I was missing a huge component of being healthy, my body needed more than just good nutrition, it needed to move. barre3 has given me that component and has helped me fully connect with my body mentally and physically. I feel better that I have ever felt and I still have a way to go, but I am listening to my body and can feel the overall improvement every week.

There’s not much more I love more than garlic. Well besides wine, wine truly does make everything better. And bacon, boy do I love bacon. But cooking with garlic does make this world a better place, and I love cooking with garlic. I put it in just about everything.

So when I received a bundle of these awesome purple beans in my Week Ten CSA Share I knew I wanted to roast these bad boys with a little garlic. You know magic is pretty cool too. And when you cook these pretty little purple beans, they magically turn green! How fun is that? If you want to impress your children with some “magic” buy some delicious purple beans, cook them and amaze your kids as they come out of the oven green. I promise you will be the coolest.

This recipe is super easy and oh so tasty. Even if you don’t have purple beans, green beans will still be equally delicious. In addition to being an excellent source of Vitamin K, green beans also contain many other valuable vitamins and minerals, making these a great option to add to your diet. Add some olive oil, garlic powder, salt & pepper and mix around.

Arrange them on a cookie sheet and put them in the oven at 400° for 25 minutes or until they turn golden brown and green!

Ingredients from our CSA:

Green Beans

 

Other Ingredients:

Olive Oil – 2 Tbsp

Garlic Powder to Taste – (I use about a tsp)

Salt & Pepper to Taste

 

Directions:

  1. Pre-heat oven to 400°
  2. Wash and trim ends on the purple (or green) beans
  3. Put in bowl and add olive oil, then add garlic powder and salt & pepper
  4. Arrange on cookie sheet and bake for 20-25 minutes or until golden brown
