Cashews, oh how I love thee. But I don’t love the soybean oil and other ingredients that you are often roasted in. And eating you raw just isn’t the same. So that is why I decided to roast my own cashews in coconut oil, and boy am I glad I did. This has become one of our favorite snacks and I always make sure we have them on hand. Especially since these pretty little nuts are packed with energy, antioxidants, minerals and vitamins, and make a perfect snack for in between meals.

Roasting your own cashews is super easy and these babies taste better than any store-bought cashews I’ve ever had.

First, soak your raw cashews in water and salt for an hour.

Nuts contain phytic acid and soaking them breaks the acid down, allowing for better absorption into your body. Nuts also contain high amounts of enzyme inhibitors and soaking them neutralizes the enzymes allowing for proper digestion. I also think soaking them makes them a little more crispy and delicious too.

Next, drain cashews and pour 1/4 cup of melted coconut oil over top and mix until covered thoroughly.

Bake at 250° for 20 minutes, remove to mix around and flip, then bake for another 20 minutes or until golden brown. Remove and sprinkle with salt to taste.

Ingredients:

4 cups Raw Cashews

1/4 cup Coconut Oil

Salt to taste (I use Pink Himalayan Crystal Sea Salt)

Directions:

  1. Soak raw cashews in water with a teaspoon of salt for an hour
  2. Pre-heat oven to 250°
  3. Drain and spread onto baking sheet
  4. Pour melted coconut oil over cashews and mix until covered thoroughly
  5. Bake for 20 minutes, remove to flip and bake for another 20 minutes or until golden brown
  6.  Remove and sprinkle with salt to taste

Today I got the USA wild caught cod loin (see above)! I don’t eat farm-raised fish, and the employee behind the counter was so helpful and got a binder out to give me all my wild caught options. You also know eating clean is very important to me, last time when I tried the salmon I just got fresh organic rosemary, lemon, garlic, and butter and that was a delicious clean option. This time I wanted to try a seasoning because cod can sometimes be a boring fish. I got it seasoned with the Vegetable Pepper Medley which is an all-natural gluten-free seasoning consisting of dehydrated red and green peppers, onion, black pepper, celery, and parsley. I then had them add fresh organic rosemary, lemon, garlic, and butter for added flavor. Another nice thing about this service is they had sealed seasoning jars right out on the counter so it was easy for me to read the ingredients and find a clean option for me. Me and the hubby both loved it and it paired great with Old Bay Cauliflower, one of my favorite recipes!

Old Bay Roasted Cauliflower is one of my absolute favorite things to eat! It’s my go to side dish whenever we have seafood, and it also makes the perfect snack for watching the game. But let me back up a minute. This Kentucky girl used to have no idea what I was missing. When I first met my husband, who is a good old Maryland boy I might add, I can remember one of the first things he asked me was if I liked seafood. At that time, popcorn shrimp and fish frys were the extent of my seafood history and knowledge. He quickly introduced me to “real” seafood when he took me back to the Chesapeake Bay and let me try all kinds of fresh new things. I swear you haven’t had a crab cake unless you’ve had one from Maryland. Okay, back to the Old Bay Roasted Cauliflower….

So my husband puts Old Bay on everything, and I mean everything. This recipe was actually his idea and typically I’m not as much of an Old Bay freak as he is, but this recipe is a keeper! Cauliflower is a great source of Vitamin K and Vitamin C and is packed with antioxidants and has some amazing anti-inflammatory benefits too. The added benefit of Old Bay, is that is makes my hubby happy! 🙂

Chop a small head of cauliflower and put into a bowl.

Drizzle about 2 Tbsp of olive oil over the cauliflower and mix until well coated.

Add a Tbsp of Old Bay and mix until coated evenly.

Spread onto a baking sheet and bake at 400° for 20 minutes or until golden brown.

Ingredients:

Head of Cauliflower

2 Tbsp of Olive Oil

1 Tbsp of Old Bay

Directions:

  1. Pre-heat oven to 400°.
  2. Wash and chop cauliflower.
  3. Put in bowl and add olive oil, coat thoroughly.
  4. Add Old Bay, coat thoroughly.
  5. Arrange on baking sheet and bake for about 20 minutes or until golden brown. (I usually remove at 10 minutes, flip them and bake for another 10 minutes).

I have to admit I am not much of a baker. I think that’s because I really do not have a sweet tooth, I’m not into cakes and pies and all that sweet stuff. My sweet Grandma Lorraine used to say, “who needs all that icing anyway” and I have to agree with her. However, with being pregnant, I suddenly have been craving sweets! I seriously could live on dark chocolate and organic vanilla bean ice cream right now. I heard that means it’s a girl, but since we aren’t finding out the gender, I guess I will have to wait and see!

I love simple clean ingredients and something that isn’t going to take all afternoon to make. So when I discovered this recipe by Elizabeth Barbone for the World’s Easiest Paleo Cookies in her new cookbook World’s Easiest Paleo Baking, and realized from start to finish it took less than 20 minutes to make these cookies, I knew I had to try them! The title is correct, with only 4 ingredients, these were so simple to make, especially for a non-baker like me, seriously it was SO easy! Not to mention, very delicious. I love that you can taste a hint of the maple syrup! 🙂

Drop dough by the tablespoonful onto the prepared baking sheet, spaced about 2 inches apart. For crisp cookies, press down the dough lightly with the bottom of a drinking glass or measuring cup. I personally wanted soft cookies, so I didn’t press down the dough.

World’s Easiest Paleo Cookies

Prep Time: 5 minutes
Bake Time: 12 minutes per pan
Yield: 16 cookies

Ingredients:

1 1/2 cups finely ground almond flour

1/2 teaspoon baking powder, homemade (see recipe below) or grain-free store-bought

1/3 cup dark maple syrup

2 teaspoons vanilla extract

Directions:

  • Adjust oven rack to the middle position and preheat the oven to 350° F. Line a rimmed baking sheet with parchment paper.
  • Whisk the almond flour and baking powder together in a medium mixing bowl. Switch to a wooden spoon and stir in the maple syrup and vanilla extract. Stir until a sticky dough holds together.
  • Drop dough by the tablespoonful onto the prepared baking sheet, spaced about 2 inches apart. For crisp cookies, press down the dough lightly with the bottom of a drinking glass or measuring cup. (If the glass sticks to the dough, lightly wet bottom of the glass.) For softer cookies, don’t press down the dough.
  • Bake until the edges are golden brown, about 12 minutes.
  • Allow the cookies to cool on the pan for about 3 minutes, then transfer them to a wire rack to cool completely.
  • Allow the baking sheet to cool, and repeat with the remaining dough.

 

Grain-Free Baking Powder
Most commercial baking powders contain a grain-based starch. Thankfully it’s easy to make your own!

Active Time: 2 minutes
Yield: about 6 tablespoons

Ingredients:

1/4 cup cream of tartar

2 tablespoons baking soda

1 teaspoon tapioca starch

Directions:

  • Whisk the cream of tartar, baking soda, and tapioca starch together in a small bowl.
  • Store in the pantry in an airtight container for up to 4 weeks.

One of my favorite parts about eating clean is updating some of my old favorite foods and recipes by substitutions and modifications. I can enjoy just about everything I always did, but in a new healthier way. Everything from pizza to tacos and more.

Everyone loves taco night right? But have you looked on the back of those taco packets and read the ingredients? Can you pronounce everything they put in there? Taco seasoning is so easy to make and tastes so much better than the packets, plus you know exactly what you are putting into your body.

Ingredients:

2   tbsp Chili Powder

1   tbsp Cumin

2   tsp Black Pepper

2   tsp Sea Salt (I like Pink Himalayan Salt)

1    tsp Garlic Powder

1    tsp Paprika

½   tsp Arrowroot Powder (or Corn Starch)

½  tsp Onion Powder

½  tsp Oregano

½  tsp Red Pepper Flakes

¼  tsp Cayenne (for more heat, add more Cayenne)

 

Directions:

Mix all ingredients together and store in a glass container. Add 2 tbsp seasoning & 1/3 cup water to 1 lb. browned ground beef and simmer for 5 minutes. You can also add to chicken, vegetables, or anything else you’d like and enjoy!

Kroger Simple Truth & Easy For You Event

I had the amazing opportunity tonight to join other Cincinnati Bloggers at the new Kroger Oakley Marketplace to check out the store, taste some food, and sip some wine (ok I didn’t drink, I’m pregnant remember, but I’ve been getting good at remembering what it tastes like!) We even got a nice surprise to bring some products and food home for dinner, which was a double bonus stocking the pantry and not having to cook tonight!

First of all this Kroger is huge! It was the first time I was there and I could literally spend hours just exploring. I lost track of time in the clothes department stocking up on comfy sweats for my growing baby bump, that I didn’t even make it into the home department before I had to head on over and join the others. I will definitely be back soon to browse some more, I might even bring my hubby and he can drink beer at their craft beer bar while I shop!

We were able to try 4 different kinds of fish and shrimp along with 4 different Simple Truth side dishes and my oh my things were tasty. My absolute favorite thing I tried was the dessert, yeah yeah of course the pregnant lady would say that right. But really, it was a Healthy Rice Pudding made with brown rice, almond milk, coconut sugar, currants and dates, and it was so warm and savory. I’m super excited they sent us home with this recipe because it is definitely something I will be making soon and sharing on this blog.

We then headed to the seafood department to pick out whatever fish you wanted to take home and make for dinner. I selected the Wild Caught Sockeye Salmon and had them season it with fresh rosemary, lemon, garlic, and butter. I wasn’t aware that you could have your fish seasoned in store, but it is part of their Easy For You Seafood program. Usually when I shop, I just buy the fish and have them wrap it up, but this is definitely another option especially if you are short on time.

Is it just me or have you ever been scared to try something because of the color? What is it about green foods, that seem so unappetizing? For the longest time I wouldn’t eat guacamole simply because it was “scary” looking. I just expected it to be gross. But in reality, it is delicious and I was missing out for many many years. I love guacamole and could seriously eat it for breakfast, lunch, and dinner!

And now Salsa Verde is my new green love! Who knew it could be so ugly, yet beyond delicious. There is something about the sweetness combined with the spiciness that just makes my mouth water. It makes a great healthy snack or appetizer and is really easy to make.

The best part about this recipe is I had the majority of the ingredients in my garden or from our weekly CSA Share. The tomatillos and garlic came from Greensleeves Farm and the jalapeños came from our backyard garden.

First remove the tomatillos from the husks and put on a cooking sheet with the jalapeños, onion, yellow pepper, and garlic cloves. I tossed these in olive oil so they would get good and roasted. Bake on 450° for 20-25 minutes or until roasted.

Then add your roasted vegetables (including the yummy juices) to your blender. Also add in the cilantro, cumin, oregano, salt, pepper, and lime juice. I used my food processor setting and mixed on pulse until the desired consistency. I prefer salsa verde to be less chunky than your typical salsa and the flavor goes a long way!

Once it is blended and chilled for at least 2 hours, enjoy with your favorite chips. I prefer organic blue corn tortilla chips. This recipe is so delicious and really, I mean really addicting! Beware that you might just shovel it all into your mouth!

Ingredients:

2 lbs. Tomatillos (about 30 small)

3 Jalapeños

1 Onion

1 Yellow Pepper

1 Lime (juiced)

5-6 Garlic Cloves (more if small cloves)

1/2 cup Cilantro (chopped)

2 Tbl Olive Oil

1 tsp Cumin

1 tsp Oregano

1 tsp Salt

1 tsp Pepper

 

Directions:

  1. Pre-heat oven to 450°
  2. Remove the husks and stems from the tomatillos and peel the garlic cloves
  3. Chop the onion and yellow pepper into large chunks and place on cookie sheet with the tomatillos and jalapeños
  4. Pour olive oil over vegetables and coat well
  5. Roast for 20-25 minutes
  6. Remove from oven and remove the stems from the jalapeños
  7. Add roasted vegetables, including the juices, to your blender and add lime juice and spices
  8. Mix until desired consistency (I use the food processor settings and pulse until smooth)
  9. Best if refrigerated for at least 2 hours until chilled and then serve with your favorite chips and enjoy!

I love avocados, there are so many ways to eat them, and all around I think they are just an awesome fruit. They have such amazing color inside and instead of removing a million seeds like some other fruits, it only has one big seed. Easy peasy seed removal at its finest. Plus avocados are packed with potassium, protein, and antioxidants. So…do they really taste good in brownies? Absolutely!

Now here’s the thing, the big butt gods blessed me with only a small, and I mean very small, sweet tooth. I’ve just never had big cravings for sugar and sweet things. However, I do have a weakness for chocolate. Especially real, dark chocolate. So every now and again, I really crave me some chocolate. When I heard you could make brownies out of avocados I knew it was something I had to try. And I am pleased to say these were so satisfying when I was craving some sweets, plus they were quick and easy to make – a big plus in my book!

One more thing, after I made these, I walked into our office where my husband was editing some pictures (he’s an amazing photographer by the way), and he took one look at me and started literally LOLing! He said go look in the mirror. So I did. And I had a little bit a ton of brownie batter all over my face. Busted…I licked the bowl, I see no harm in that 🙂

Pre-heat your over to 350°, remove the seeds from your avocados and scoop into a food processor. Blend until smooth, and I mean smooth – you don’t want chunky brownies!

Ingredients:

5 oz Semi-Sweet Chocolate Chips

1 Tbsp Carrington Farms Organic Extra Virgin Coconut Oil, 54 Ounce

3 Avocados

1/4 cup Honey

3 Eggs

1/4 cup Unsweetened Cocoa Powder

1 Tbsp Vanilla

1 Tbsp Coconut Flour

1 tsp Baking Soda

1/2 tsp Salt

 

Directions:

  1. Pre-heat oven to 350°
  2. Slice the avocados in half, remove the seeds and put them into a food processor
  3. Blend until smooth
  4. Melt chocolate chips and coconut oil to a liquid
  5. Mix all ingredients together into bowl and mix until smooth
  6. Grease 8×8 baking dish with coconut oil
  7. Pour batter into baking dish and bake for 30 minutes or until toothpick comes out clean

There’s not much more I love more than garlic. Well besides wine, wine truly does make everything better. And bacon, boy do I love bacon. But cooking with garlic does make this world a better place, and I love cooking with garlic. I put it in just about everything.

So when I received a bundle of these awesome purple beans in my Week Ten CSA Share I knew I wanted to roast these bad boys with a little garlic. You know magic is pretty cool too. And when you cook these pretty little purple beans, they magically turn green! How fun is that? If you want to impress your children with some “magic” buy some delicious purple beans, cook them and amaze your kids as they come out of the oven green. I promise you will be the coolest.

This recipe is super easy and oh so tasty. Garlic Powder to Taste – (I use about a tsp)

Salt & Pepper to Taste

 

Directions:

  1. Pre-heat oven to 400°
  2. Wash and trim ends on the purple (or green) beans
  3. Put in bowl and add olive oil, then add garlic powder and salt & pepper
  4. Arrange on cookie sheet and bake for 20-25 minutes or until golden brown
