Sumo Citrus: Kudos to the Sumos

The midwest just got a whole lot sweeter! If you are like me (which I assume you are since you are reading my blog) then you probably enjoy a good piece of fruit. Especially deliciously sweet oranges when they are in season. But you know what the worst thing about oranges are? Peeling them! Ask my husband, it seriously takes me over 5 minutes to peel an orange. No joke. He actually says it is painful to watch me, and just peels them for me now. He’s awesome I know. But I was recently introduced to what I may now consider the best citrus ever, the Sumo Citrus®! Not only are these bad boys maybe the sweetest mandarin I’ve ever eaten, but they are huge, seedless, and my favorite…easy to peel! Consider them the big brother to the Cuties® or Halos®.

Originally developed in Japan, the Sumo Citrus® is grown right here in the United States on family farms in sunny California. You can actually read about the growers on their website so you know exactly where your fruit is coming from. Plus these are Non-GMO and they are packaged with environmentally friendly, safe, green, and 100% recyclable material. A big plus in my book!

Unfortunately you won’t be able to find these year round and are only is season February-May. But thankfully Kroger is one of only a few retailers outside California to offer the distinct Sumos at an affordable price. You will be able to find these at Kroger stores in Greater Cincinnati, Northern Kentucky, and Dayton for the next 6-8 weeks, so get your fix while you can. I know I will be packing a lot of these for lunch and be sure to stop back in a few weeks for recipes. I already have some dinner ideas using these sweet bad boys.

I had to add one last picture of my little sumo.

This post is sponsored by Kroger, but experiences and views are my own.

Oven Roasted Cashews

Oven Roasted Cashews - www.eatcleanlivesimple.com

Cashews, oh how I love thee. But I don’t love the soybean oil and other ingredients that you are often roasted in. And eating you raw just isn’t the same. So that is why I decided to roast my own cashews in coconut oil, and boy am I glad I did. This has become one of our favorite snacks and I always make sure we have them on hand. Especially since these pretty little nuts are packed with energy, antioxidants, minerals and vitamins, and make a perfect snack for in between meals.

Oven Roasted Cashews - www.eatcleanlivesimple.com

Roasting your own cashews is super easy and these babies taste better than any store-bought cashews I’ve ever had.

First, soak your raw cashews in water and salt for an hour.

Nuts contain phytic acid and soaking them breaks the acid down, allowing for better absorption into your body. Nuts also contain high amounts of enzyme inhibitors and soaking them neutralizes the enzymes allowing for proper digestion. I also think soaking them makes them a little more crispy and delicious too.

Oven Roasted Cashews - www.eatcleanlivesimple.com

Next, drain cashews and pour 1/4 cup of melted coconut oil over top and mix until covered thoroughly.

Bake at 250° for 20 minutes, remove to mix around and flip, then bake for another 20 minutes or until golden brown. Remove and sprinkle with salt to taste.

Easy Lent Options With Kroger Easy For You Seafood – Plus Save Money!

Kroger Easy For You Seafood - www.eatcleanlivesimple.com

Lent…that time of year we all either love or hate. Whether you are giving up something like chocolate or social media, or doing something positive, like a random act of kindness each day, it’s about making a positive change for 40 days, that hopefully you can continue beyond Easter. I love this time of the year, counting down the final days of winter, swim suits in the stores, and planning those summer vacations. But if you’re like me, Lent also means no meat on Fridays. I always have flashbacks of fish sticks or fried fish sandwiches from 12 years of private school. Now those options are fast and easy, but not really good for you. Luckily Kroger’s Easy For You Seafood program, gives you fast and easy options that are also much healthier than fried processed fish.

Kroger Easy For You Seafood - www.eatcleanlivesimple.com

I was first introduced to Kroger’s Easy For You Seafood a few weeks ago at the new Oakley Kroger Blogger Event, you can read about that HERE. That first time I got the wild caught salmon with fresh organic herbs, lemon, garlic, and butter and it was delicious (see image above)! I knew I would be using this program again and again, making it easy for someone like me with a busy schedule to have a quick and easy healthy option for dinner.

Kroger Easy For You Seafood - www.eatcleanlivesimple.com

Today is the first Friday in Lent and Kroger is offering a $1 Off Easy For You Seafood, every Friday during Lent, Feb 12-Mar 25. You all know I love to save money, but what makes this even cooler is the fact that the $1 off coupon is automatically added to your plus card account (SO simple right!) and you can use this an unlimited amount of times (score!)! So if you buy 5 Easy For You Seafoods, you get $5 off! Can’t beat that!

If you don’t know how the Easy For You Seafood program works, here is the cliff notes version.

  1. Choose Your Seafood
  2. Choose Your Seasoning and Garnish
  3. Take The Oven-Ready bag Home and Bake

It really is that easy! Plus this service is free!

Kroger Easy For You Seafood - www.eatcleanlivesimple.com

Today I got the USA wild caught cod loin (see above)! I don’t eat farm-raised fish, and the employee behind the counter was so helpful and got a binder out to give me all my wild caught options. You also know eating clean is very important to me, last time when I tried the salmon I just got fresh organic rosemary, lemon, garlic, and butter and that was a delicious clean option. This time I wanted to try a seasoning because cod can sometimes be a boring fish. I got it seasoned with the Vegetable Pepper Medley which is an all-natural gluten-free seasoning consisting of dehydrated red and green peppers, onion, black pepper, celery, and parsley. I then had them add fresh organic rosemary, lemon, garlic, and butter for added flavor. Another nice thing about this service is they had sealed seasoning jars right out on the counter so it was easy for me to read the ingredients and find a clean option for me. Me and the hubby both loved it and it paired great with Old Bay Cauliflower, one of my favorite recipes!

Old Bay Roasted Cauliflower - www.eatcleanlivesimple.com

So happy Lent! I encourage you toss out those fish sticks and visit your Kroger today to try the Easy for You Seafood program and don’t forget on Fridays through lent you get $1 off! Be sure to share this, so your friends can save too! If you want more information about Kroger’s Easy For You Seafood program, click HERE.

Old Bay Roasted Cauliflower

Old Bay Roasted Cauliflower - www.eatcleanlivesimple.com

Old Bay Roasted Cauliflower is one of my absolute favorite things to eat! It’s my go to side dish whenever we have seafood, and it also makes the perfect snack for watching the game. But let me back up a minute. This Kentucky girl used to have no idea what I was missing. When I first met my husband, who is a good old Maryland boy I might add, I can remember one of the first things he asked me was if I liked seafood. At that time, popcorn shrimp and fish frys were the extent of my seafood history and knowledge. He quickly introduced me to “real” seafood when he took me back to the Chesapeake Bay and let me try all kinds of fresh new things. I swear you haven’t had a crab cake unless you’ve had one from Maryland. Okay, back to the Old Bay Roasted Cauliflower….

So my husband puts Old Bay on everything, and I mean everything. This recipe was actually his idea and typically I’m not as much of an Old Bay freak as he is, but this recipe is a keeper! Cauliflower is a great source of Vitamin K and Vitamin C and is packed with antioxidants and has some amazing anti-inflammatory benefits too. The added benefit of Old Bay, is that is makes my hubby happy! 🙂

World’s Easiest Paleo Cookies

World's Easiest Paleo Cookies - www.eatcleanlivesimple.com

I have to admit I am not much of a baker. I think that’s because I really do not have a sweet tooth, I’m not into cakes and pies and all that sweet stuff. My sweet Grandma Lorraine used to say, “who needs all that icing anyway” and I have to agree with her. However, with being pregnant, I suddenly have been craving sweets! I seriously could live on dark chocolate and organic vanilla bean ice cream right now. I heard that means it’s a girl, but since we aren’t finding out the gender, I guess I will have to wait and see!

I love simple clean ingredients and something that isn’t going to take all afternoon to make. So when I discovered this recipe by Elizabeth Barbone for the World’s Easiest Paleo Cookies in her new cookbook World’s Easiest Paleo Baking, and realized from start to finish it took less than 20 minutes to make these cookies, I knew I had to try them! The title is correct, with only 4 ingredients, these were so simple to make, especially for a non-baker like me, seriously it was SO easy! Not to mention, very delicious. I love that you can taste a hint of the maple syrup! 🙂

Drop dough by the tablespoonful onto the prepared baking sheet, spaced about 2 inches apart. For crisp cookies, press down the dough lightly with the bottom of a drinking glass or measuring cup. I personally wanted soft cookies, so I didn’t press down the dough.

Don’t they look heavenly. These were soft and moist, but had a nice golden brown outer layer.

World's Easiest Paleo Cookies - www.eatcleanlivesimple.com

World’s Easiest Paleo Cookies

Prep Time: 5 minutes
Bake Time: 12 minutes per pan
Yield: 16 cookies

Ingredients:

1 1/2 cups finely ground almond flour

1/2 teaspoon baking powder, homemade (see recipe below) or grain-free store-bought

1/3 cup dark maple syrup

2 teaspoons vanilla extract

Directions:

  • Adjust oven rack to the middle position and preheat the oven to 350° F. Line a rimmed baking sheet with parchment paper.
  • Whisk the almond flour and baking powder together in a medium mixing bowl. Switch to a wooden spoon and stir in the maple syrup and vanilla extract. Stir until a sticky dough holds together.
  • Drop dough by the tablespoonful onto the prepared baking sheet, spaced about 2 inches apart. For crisp cookies, press down the dough lightly with the bottom of a drinking glass or measuring cup. (If the glass sticks to the dough, lightly wet bottom of the glass.) For softer cookies, don’t press down the dough.
  • Bake until the edges are golden brown, about 12 minutes.
  • Allow the cookies to cool on the pan for about 3 minutes, then transfer them to a wire rack to cool completely.
  • Allow the baking sheet to cool, and repeat with the remaining dough.

Grain-Free Baking Powder
Most commercial baking powders contain a grain-based starch. Thankfully it’s easy to make your own!

Active Time: 2 minutes

1/4 cup cream of tartar

2 tablespoons baking soda

1 teaspoon tapioca starch

Directions:

  • Whisk the cream of tartar, baking soda, and tapioca starch together in a small bowl.

Easy Clean Taco Seasoning Recipe

Easy Clean Taco Seasoning - www.eatcleanlivesimple.com

One of my favorite parts about eating clean is updating some of my old favorite foods and recipes by substitutions and modifications. I can enjoy just about everything I always did, but in a new healthier way. Everything from pizza to tacos and more.

Everyone loves taco night right? But have you looked on the back of those taco packets and read the ingredients? Can you pronounce everything they put in there? Taco seasoning is so easy to make and tastes so much better than the packets, plus you know exactly what you are putting into your body.

Easy Clean Taco Seasoning - www.eatcleanlivesimple.com

Ingredients:

2   tbsp Chili Powder

1   tbsp Cumin

2   tsp Black Pepper

2   tsp Sea Salt (I like Pink Himalayan Salt)

1    tsp Garlic Powder

1    tsp Paprika

½   tsp Arrowroot Powder (or Corn Starch)

½  tsp Onion Powder

½  tsp Oregano

½  tsp Red Pepper Flakes

¼  tsp Cayenne (for more heat, add more Cayenne)

Directions:

Mix all ingredients together and store in a glass container. Add 2 tbsp seasoning & 1/3 cup water to 1 lb. browned ground beef and simmer for 5 minutes. You can also add to chicken, vegetables, or anything else you’d like and enjoy!

Kroger Simple Truth & Easy For You Event

Simple Truth - www.eatcleanlivesimple.com

I had the amazing opportunity tonight to join other Cincinnati Bloggers at the new Kroger Oakley Marketplace to check out the store, taste some food, and sip some wine (ok I didn’t drink, I’m pregnant remember, but I’ve been getting good at remembering what it tastes like!) We even got a nice surprise to bring some products and food home for dinner, which was a double bonus stocking the pantry and not having to cook tonight!

First of all this Kroger is huge! It was the first time I was there and I could literally spend hours just exploring. I lost track of time in the clothes department stocking up on comfy sweats for my growing baby bump, that I didn’t even make it into the home department before I had to head on over and join the others. I will definitely be back soon to browse some more, I might even bring my hubby and he can drink beer at their craft beer bar while I shop!

Simple Truth - www.eatcleanlivesimple.com

We were able to try 4 different kinds of fish and shrimp along with 4 different Simple Truth side dishes and my oh my things were tasty. My absolute favorite thing I tried was the dessert, yeah yeah of course the pregnant lady would say that right. But really, it was a Healthy Rice Pudding made with brown rice, almond milk, coconut sugar, currants and dates, and it was so warm and savory. I’m super excited they sent us home with this recipe because it is definitely something I will be making soon and sharing on this blog.

We then headed to the seafood department to pick out whatever fish you wanted to take home and make for dinner. I selected the Wild Caught Sockeye Salmon and had them season it with fresh rosemary, lemon, garlic, and butter. I wasn’t aware that you could have your fish seasoned in store, but it is part of their Easy For You Seafood program. Usually when I shop, I just buy the fish and have them wrap it up, but this is definitely another option especially if you are short on time.

Simple Truth - www.eatcleanlivesimple.com

I came home, baked the salmon, heated up the sides, and me and the hubby enjoyed our delicious dinner. Doesn’t it look amazing?

Simple Truth - www.eatcleanlivesimple.com

Special thanks to the Kroger Oakley Marketplace for hosting this event and for sending us home with dinner and these awesome Simple Truth Organic products. I’ve said it before and I will say it again, I love Simple Truth Organic products, they allow me and my family to eat healthy AND on a budget, both of which are super important to me. I am so excited to see what new products they come out with next.

barre3, Are you up for The Challenge?

barre3 www.eatcleanlivesimple.com

In less than 24 hours we will be toasting champagne, tossing confetti, and ringing in the New Year with the ones we love. Typically this is the time of the year when we make resolutions, promising ourselves to make a change or do something different, something better. Maybe you want to get in shape, start eating healthy, or quit smoking? Whatever your resolution is, the key is making it a New YOU Resolution, not just a New Years Resolution.

There are many exciting things headed my way in 2016, a new baby for starters. I’d say that’s a pretty big change, a challenge that we are excited to face. However, there is another Challenge that I need to face first before babies and that is barre3. Many of you read about my Experience With barre3 that I posted earlier this year, if not check it out! Happy Belly on Vine - www.eatcleanlivesimple.com

As a “clean eater” I was beyond the moon excited to find Happy Belly on Vine. If you know me, you know I rarely eat out. Mainly because most restaurants aren’t an open book about their menu and I need to know what I am putting in my belly. (After all, I don’t want it to be “un”happy!) Clean eating limits highly processed foods, preservatives, and anything that has been stripped of its nutritional value. Eating clean allows you to use food as an energy source and nourish the body, it makes your belly happy. You simply just feel better and have more energy if you eat clean. Gone are my days of bloat, fatigue, and brain fog after meals.

Abby Reckman, owner of Happy Belly on Vine, opened her doors in July 2014. Happy Belly - www.eatcleanlivesimple.com

Abby invited me to try some of their most delicious menu features. After an afternoon of tasting, trying and drooling over some delicious food, I can tell you it is not only good for you, but absolutely delicious as well. So now to the fun part, the food. (Warning: The images below will make you hungry and possibly drool.)

First up, The Hans, which is part of their all-day breakfast menu. This sandwich, served on a sprouted English muffin or gluten-free bread, is a free-range egg with spinach, turkey bacon, avocado, tomato, and Amish cheese. The flavors just melted together in my mouth and with just one bite of this and you’ll never say the words Egg McMuffin again!

Salsa Verde

Salsa Verde - www.eatcleanlivesimple.com

Is it just me or have you ever been scared to try something because of the color? What is it about green foods, that seem so unappetizing? For the longest time I wouldn’t eat guacamole simply because it was “scary” looking. I just expected it to be gross. But in reality, it is delicious and I was missing out for many many years. I love guacamole and could seriously eat it for breakfast, lunch, and dinner!

And now Salsa Verde is my new green love! Who knew it could be so ugly, yet beyond delicious. There is something about the sweetness combined with the spiciness that just makes my mouth water. It makes a great healthy snack or appetizer and is really easy to make.

Salsa Verde - www.eatcleanlivesimple.com

The best part about this recipe is I had the majority of the ingredients in my garden or from our weekly CSA Share. The tomatillos and garlic came from Greensleeves Farm and the jalapeños came from our backyard garden.

Salsa Verde - www.eatcleanlivesimple.com

First remove the tomatillos from the husks and put on a cooking sheet with the jalapeños, onion, yellow pepper, and garlic cloves. I tossed these in olive oil so they would get good and roasted. Bake on 450° for 20-25 minutes or until roasted.

Salsa Verde - www.eatcleanlivesimple.com

Then add your roasted vegetables (including the yummy juices) to your blender. Also add in the cilantro, cumin, oregano, salt, pepper, and lime juice. I used my food processor setting and mixed on pulse until the desired consistency. I prefer salsa verde to be less chunky than your typical salsa and the flavor goes a long way!

Salsa Verde - www.eatcleanlivesimple.com

Once it is blended and chilled for at least 2 hours, enjoy with your favorite chips. I prefer organic blue corn tortilla chips. This recipe is so delicious and really, I mean really addicting! Beware that you might just shovel it all into your mouth!

Salsa Verde - www.eatcleanlivesimple.com

Ingredients:

2 lbs. Tomatillos (about 30 small)

3 Jalapeños

1 Onion

1 Yellow Pepper

1 Lime (juiced)

5-6 Garlic Cloves (more if small cloves)

1/2 cup Cilantro (chopped)

2 Tbl Olive Oil

1 tsp Cumin

1 tsp Oregano

1 tsp Salt

1 tsp Pepper

Directions:

  1. Pre-heat oven to 450°
  2. Remove the husks and stems from the tomatillos and peel the garlic cloves
  3. Chop the onion and yellow pepper into large chunks and place on cookie sheet with the tomatillos and jalapeños
  4. Pour olive oil over vegetables and coat well
  5. Roast for 20-25 minutes
  6. Remove from oven and remove the stems from the jalapeños
  7. Add roasted vegetables, including the juices, to your blender and add lime juice and spices
  8. Mix until desired consistency (I use the food processor settings and pulse until smooth)
